    I really need some – I can give it to someone who actually knows how to cook, not me (Mr. Microwave)!

    I’m intrigued by the idea of cooking with alcohol, or whiskey cakes.

    Steak and Guiness Pie

    500 g beef
    1/2 cup plain flour
    1 cup onions
    1 carrot
    150 g mushrooms
    2 teaspoons sage
    150 ml Guinness stout
    250 ml beef stock
    1 sheet puff pastry
    2 tablespoons oil
    salt and pepper
    milk

    HEAT oil in frying pan and cook chopped carrot,diced onion, sliced mushroom, sliced celery, sage until soft;.
    Transfer to casserole dish.
    Cut beef into 1 – 2 inch pieces.
    COAT beef in flour and add to fry pan; add extra oil if needed; BROWN.
    ADD to casserole dish.
    COMBINE beef stock and guinness; add to casserole dish; salt and pepper to taste.
    Cover and bake for 2 hours on 150 degrees; stir occasionally.
    TRANSFER cooked meat and vegetables to either 1 pie dish or individual ramekin dishes; TOP with puff pastry; brush with egg wash or milk.
    Piece puff pastry with fork and cook for approximately 25 minutes until golden.
    Enjoy!

    Irish Soda Bread

    3 1/2 cups flour
    1/2 cup sugar
    1/2 teaspoon baking soda
    2 teaspoons baking powder
    1 teaspoon salt
    1 pint sour cream
    2 eggs
    2 tablespoons caraway seeds (optional but I always use them)
    3/4 cup raisins

    Combine dry ingredients together in a large bowl.
    In a small bowl beat eggs and stir in sour cream.
    Add the egg and sour cream mixture to the dry ingredients and stir with a wooden spoon.
    Batter will be very thick.
    Add the raisins and caraway seeds and stir well with wooden spoon or knead in with your hands.
    Place batter in a greased 9 inch springform pan.
    Dust the top with enough flour so that you can pat the batter like a bread dough evenly in the pan without it sticking to your hands.
    With a knife make a shallow crisscross on the top.
    Bake for 50 minutes in a preheated 350ºF oven.

    Whiskey Sausage

    5 lbs kielbasa
    2 cups ketchup
    2 cups brown sugar
    1 cup whiskey
    1 teaspoon cinnamon

    mix ketchup, brown sugar, whiskey, and cinnamon.
    cut sausage into 1-2" lengths, then diagonal cut the lengths.
    layer sausage, sauce, sausage, sauce, etc.
    in a crock pot, and cook on low overnight (appx: 8-10 hrs).

    7. DUBLIN STEAK WITH GUINNESS

      1 kg. Rump steak
      2 tablespoons dripping
      2 lge. brown onions, chopped
      2 cloves of garlic,crushed
      1/4 cup plain flour
      1 cup beef stock
      1 cup of Guinness
      2 large carrots sliced
      2 bay leaves
      1 sprig fresh thyme
      ground pepper
      1/2 cup prunes, halved and pitted (optional)
      Chopped parsley for garnish
      Remove any fact from the meat, cut into 1cm cubes. Heat 1 tablespoon of dripping in a pan and cook onions until pale golden. Add garlic, cook 1 minute longer, remove from pan and drain on absorbent paper.
      Heat remaining dripping in a larger pan, add meat and cook quickly to brown on all sides. Reduce heat, stir in flour until all meat is coated.
      Blend through stock to form a thick smooth sauce. Add Guinness and stir until mixture comes to simmering point. Add onions, carrots, herbs and pepper, stir until combined.
      Simmer gently for 1 1/2 hours, stirring occasionally to prevent catching. Cook uncovered so that sauce can reduce and thicken. Serve garnished with chopped parsley.
      Note: If using prunes, add to pan in the final 30 minutes of cooking. The addition of prunes to this dish adds sweetness and balances the distinctive bitterness of Guinness.

      INGREDIENTS:
      1 medium head cabbage, shredded
      1 small onion, chopped
      1 cup water
      1 (15.5 ounce) can white hominy, rinsed and drained
      3/4 pound thinly sliced corned beef, chopped
      1/4 teaspoon salt
      1/4 teaspoon pepper
      1/4 teaspoon hot pepper sauce

      DIRECTIONS:
      In a large Dutch oven or saucepan, combine cabbage, onion and water; bring to a boil. Reduce heat; cover and simmer for 15 minutes or until the cabbage is tender. Add remaining ingredients; simmer for 5 minutes.

      White Soda Bread

      4 cups (16 oz) of all purpose flour.
      1 Teaspoon baking soda
      1 Teaspoon salt
      14 oz of buttermilk

      Method:

      Preheat the oven to 425 F. degrees. Lightly crease and flour a cake pan.

      In a large bowl sieve and combine all the dry ingredients.

      Add the buttermilk to form a sticky dough. Place on floured surface and lightly knead (too much allows the gas to escape)

      Shape into a round flat shape in a round cake pan and cut a cross in the top of the dough.

      Cover the pan with another pan and bake for 30 minutes (this simulates the bastible pot). Remove cover and bake for an additional 15 minutes.

      The bottom of the bread will have a hollow sound when tapped so show it is done.

      Cover the bread in a tea towel and lightly sprinkle water on the cloth to keep the bread moist.

    17. Corned Beef Brisket Recipe
      Ingredients :
      1 (8-10 lb) beef brisket
      4 garlic cloves, peeled and cut in thirds
      The Brine
      1/2 cup white vinegar
      4 tablespoons sugar
      2 quarts water
      1 cup kosher salt
      3 bay leaves
      1/2 teaspoon mustard seeds
      1 pinch ground cloves
      1 teaspoon peppercorns
      The Simmering Liquid
      water, to come up 3/4 to side of brisket
      1/2 teaspoon whole allspice
      1/4 teaspoon whole cloves
      1 teaspoon peppercorns
      1/2 teaspoon mustard seeds
      4 garlic cloves, sliced
      Preparation :
      Combine all of the brine ingredients and bring to a boil, then cool. Place the beef brisket, the cooled brine, and the 4 garlic cloves in a huge plastic roasting bag. Make sure that all of the meat is covered by the brine, tie off tightly, place in a pot large enough to hold it all, and refrigerate for 6 to 7 days, turning occasionally.
      After the 6 to 7 days, discard the brine after removing the brisket from the brine. The meat should be thoroughly rinsed and then placed in a Dutch oven or other large pot. Add enough water to come up 2/3 to 3/4 of the way up the side of the meat.
      Add the rest of the Simmering Liquid ingredients (peppercorns, mustard seeds, allspice, cloves and garlic), bring to a boil and skim off any foam. Reduce heat to a low simmer and cook, covered, for at least 3 hours.
      6-8 servings.

      Irish Jig Dessert
      Ingredients :
      2 tablespoons sugar
      2 tablespoons whiskey
      2 cups heavy whipping cream
      1 teaspoon confectioner’s sugar
      1 cup coconut macaroons
      1/2 teaspoon vanilla extract
      Preparation :
      Crush the macaroons and set aside. Be sure the whipping cream is thoroughly chilled, along with the bowl and beater attachments. Mix all ingredients other than the macaroons. Beat until stiff peaks are formed. Fold in 3/4 cup crushed macaroons. Spoon into 6-8 dessert glasses. Sprinkle with additional macaroons. Serve immediately.

      Lemon-Irish Whiskey Cake Recipe
      Ingredients :
      Ideally this recipe should be started the day before baking.
      1 lemon, zest of, cut into julienne
      3/4 cup superfine sugar (regular sugar can be processed in a blender of food processor)
      3 eggs, beaten
      1/4 cup Irish whiskey
      3/4 cup butter, at room temperature
      2 cups flour
      3/4 cup almonds, ground
      1 pinch salt
      Preparation :
      Place julienned lemon zest in a small bowl. Let it soak in whiskey overnight. The next day, preheat oven to 350°F .Grease a 9 inch cake pan. Cream the butter and sugar together until light and fluffy and then whisk in the eggs. Sift the flour and add to the butter mixture together with the salt. Stir to blend. Fold in the ground almonds. Strain the whiskey, discarding the zest, and stir the whiskey into the batter. Pour into the prepared pan, and bake for about one hour, until golden brown, and a toothpick inserted in the center comes out clean.

    18. Laura’s Harvey Wallbanger Cake
      1package (2-layer size) yellow cake mix
      1package (6-serving size)instant vanilla pudding
      4eggs
      ½cup vegetable oil
      ¼cup vodka
      ¼cup Galliano
      ¾cup orange juice
      Powdered sugar drizzle (see recipe)

      Preheat oven to 350 degrees.

      In bowl, combine all ingredients but the drizzle and mix with electric mixer 4 minutes. Spoon into a greased and floured 10-cup Bundt pan.

      Bake in preheated oven 45 to 50 minutes or until cake tests done. Let cool slightly on wire rack, then turn out onto serving platter. Top with drizzle while cake is still warm. Makes about 12 servings.
      Powdered sugar drizzle:
      1cup powdered sugar
      1tablespoon orange juice
      1½tablespoons Galliano liquor
      1tablespoon vodka
      add a couple drops of green food coloring~until you get the color you like (while make green frosting)
      Mix all ingredients until smooth. Drizzle over warm cake

      Here you go:
      Homemade Irish Cream Liquor (like Baileys)
      1/2 C honey
      1 C heavy cream
      1 1/2 C Irish whiskey
      1/2 teaspoon instant coffee

      Combine all ingredients, mix well and store in the refrigerator. Make at least 3-4 days before serving, giving the container a shake a couple of times a day. Consume within 2 weeks.

      Beer Potato Soup
      2 T butter
      1 tsp.garlic
      1 bunch green onions, chopped
      1 stalk diced celery
      6 cups boiled diced potatoes
      32 ounces beer
      1 T sugar
      1 T chicken boullion
      64 oz. chicken stock
      roux to thicken
      4 cups cream
      salt and pepper to taste

      Sauté garlic in butter for 1 minute, add vegetables and saute for 3-5 minutes or until tender. Add potatoes and beer and bring to a boil. Mash potatoes against sides of pot. Add sugar, stock, boullion and salt and pepper. Add roux until thick. Add cream, stir and serve.

      Ham Steaks with Irish Whiskey Sauce
      4 ham steaks
      2 tsp. onion, finely chopped
      1 tsp. brown sugar
      2 tsp. Irish Whiskey
      1 T flour
      1 T butter, melted
      3/4 c water or stock
      salt and pepper to taste

      Brush ham steaks with melted butter. Snip fat to prevent curling, and grill for 7-8 minutes each side.

      Sauce
      Sauté onions in remainder of butter until cooked. Remove from heat and stir in flour gradually. Add water or stock. Return to heat. Add sugar and bring to the boil. Simmer gently for about 2 minutes to cook flour. If sauce seems a little thick, add more water or stock. Add whiskey and season to taste. Place ham steaks on a serving platter and pour on sauce.

      AND- I want this one soooo bad:
      Brownies with Irish Cream Icing
      Brownies
      4 oz. bittersweet chocolate
      1 oz. unsweetened chocolate
      1/2 C butter
      3/4 C sugar
      2 tsp. vanilla extract
      1/4 tsp. salt
      3 large eggs
      1 C flour

      Topping
      1/3 C Irish Cream liqueur
      8 oz. white chocolate, chopped

      Pre-heat oven to 325° F.

      Line a 8" x 8" baking pan with aluminum foil , leaving at least 2 inches of foil overhanging on all sides (this will help you life the finished brownies out of the pan and eliminate messy pan clean-up). Set aside.

      Melt chocolate and butter together in a heavy saucepan over medium heat, stirring constantly. Remove from heat and cool slightly.

      Whisk sugar, vanilla and salt into chocolate mixture, followed by the eggs, one at a time. Continue whisking mixture until it is shiny and smooth. Add flour and whisk just until blended. Pour batter into prepared pan and level top. Bake for about 35 minutes, or until cake tester comes out with a few moist crumbs clinging to it. Cool completely in pan.

      Topping
      Heat liqueur to a boil, remove from heat and whisk in white chocolate until it is completely melted and mixture is smooth. Refrigerate until mixture becomes thick enough to spread, stirring occasionally, about 30 minutes. Spread topping over brownies and refrigerate until cold. Let stand at room temperature for 30 minutes before serving. To cut, simply lift brownies, foil and all out of pan, peel off foil and cut!

      Serves 4 to 6
      Irish stew is traditionally served with buttered boiled carrots.

      3 pounds small Yukon gold potatoes, peeled
      2 medium onions (about 1 pound), halved lengthwise and cut into thin half-moons
      2 1/2 pounds lamb shoulder, cut into 1-inch cubes
      2 1/2 teaspoons coarse salt
      Freshly ground pepper
      2 teaspoons coarsely chopped fresh thyme
      3 cups homemade lamb stock, or homemade or lowsodium store-bought chicken stock
      2 tablespoons finely chopped fresh curly- or flat-leaf parsley

      1. Preheat oven to 325°. Cut 1 pound of the potatoes into 1/4-inch-thick rounds; spread them out in a large (5- to 6-quart) heavy-bottom pot or Dutch oven. Layer half the onions on top of the potatoes.

      2. Place lamb cubes on top of onions. Sprinkle with 1 1/2 teaspoons salt; season with pepper. Add the thyme. Place remaining onions on top of lamb. Add the stock and 1 cup water.

      3. Place whole potatoes on top of onions. Sprinkle with remaining teaspoon salt; season with pepper. Cover with a tight-fitting lid; bring to a boil over medium-high heat. Transfer to oven; cook, without stirring, 2 hours. Sprinkle with parsley.

      Irish Soda Bread
      Serves 4 to 6
      Graham flour is coarser than regular whole-wheat flour, which also works. If you use the latter, substitute one-half cup wheat bran for one-half cup all-purpose flour.

      3 cups all-purpose flour, plus more for dusting
      1 cup whole-wheat graham flour
      2 1/2 teaspoons coarse salt
      1 teaspoon baking soda
      1 teaspoon baking powder
      4 tablespoons cold unsalted butter, cut into small pieces
      1 2/3 cups buttermilk

      1. Preheat oven to 350°. Line a baking sheet with parchment paper; set aside. Whisk together the flours, salt, baking soda, and baking powder in a large bowl. With a pastry blender or your fingertips, blend in butter until it resembles small peas. Add buttermilk all at once; stir with a fork until mixture holds together.

      2. In the bowl, pat the dough into a domeshaped loaf about 7 inches in diameter. Lift out dough; transfer to lined sheet.

      3. Lightly dust top of loaf with flour. Cut a 3/4-inch-deep cross in top, reaching almost all the way to edges. Bake, rotating sheet halfway through, until deep golden brown and a cake tester inserted into the center comes out clean, about 1 hour and 20 minutes. Let cool on a wire rack.
